Advertisement Like most finger foods, tacos are a big hit with our little foodies. Maybe it’s the fact that their fingers get all messy or the fact that they can build their own with a variety of toppings. We’re not complaining; at least they’ll eat their fill. Instead of ground beef, these tacos call for turkey, so they’re a lot less “guilty” while still tasting delicious. So go ahead and serve yourself a second, we promise the whole fam will be gobbling them down in a flash. Ingredients 1 1/3 lbs of ground turkey breast 1 green pepper 2 portabella mushrooms 2 tbs of chipotle or chipotle paste Salt and pepper to taste 10 taco shells/corn tortillas 1/4 c fat-free re-fried beans 1 cup of shredded low-fat cheese 1/4 c fat-free sour cream 1/2 c salsa 1 tbs of olive oil 1 c of lettuceMethod 1. Dice the green pepper and portabella mushroom. In a frying pan, add olive oil and place over medium-high heat. When hot, add the green pepper, the portabella mushroom and 1 tbs of chipotle or chipotle paste. Cook for 5 minutes. Remove from pan and set aside.2. Season turkey with salt and pepper and add the remaining chipotle paste. Add to frying pan and cook for approximately 10 minutes or until no pink spots remains.3. Add the peppers and the portabella mushroom and mix well. Let it cook for 3 to 4 minutes. Remove from heat and set aside.4. Serve in warmed taco shells or heated tortillas.
