Recipe: Smoked Sausage One Pan Dish

Who doesn’t love a one-pan dish? Easy to prep and easy to clean, this Smoked Sausage One Pan Dish, with yummy and nutritious sweet potatoes, red apples and smoked sausage, is great for parents and kids alike.

Ingredients

Eckrich® Smoked Sausage 10 – 14 oz.
Sweet potatoes, peeled, cut into 1/2 inch cubes 2 whole
Red delicious apples, cored, cut into 1/2 inch cubes 2 whole
Red onion, cut into thin wedges 1 whole
Chopped fresh rosemary or sage, plus additional for garnish 2 Tbsp.
Oil 2 Tbsp.
Salt 1/2 Tsp.
Black Pepper 1/2 Tsp.

Instructions

  1. Preheat oven to 400ºF.
  2. Cut each Eckrich Smoked Sausage into 4 pieces; place in large bowl. Add remaining ingredients; mix well.
  3. Pour onto 11 x 15-inch sheet pan or another large-rimmed pan.
  4. Bake 25 minutes; stir. Continue baking 20 to 25 minutes or until vegetables are tender and lightly browned. Top with sprigs of herbs.
