Tropical Pitaya Smothie Bowl

The tropical combination of  mango, pineapple and banana paired with the mild taste of Pitaya hits the spot every time. Sprinkled with protein rich health filled toppings makes this a perfect snack.

Ingredients:

Smoothie:
1 cup frozen mango
½ cup frozen pineapple
1 frozen banana
1 frozen pack of Pitaya
¾ cup almond milk (more or less depending on desired consistency)

Toppings:
Shredded coconut
Hemp seeds
fresh blueberries
pecans
mulberries

Chef’s note: You can use fresh fruit for some of the frozen if you want, or freeze your own fresh, however the frozen gives your bowl a thicker consistency. I measured the fruit by loosely placing in a measuring cup and stopping when first piece hit the measure I was looking for. Any milk of choice will work.

Method:
Place all smoothie ingredients into a blender and mix until well blended. Add a touch more milk if too thick and won’t blend, but you want it as thick as possible. Once blended, place in bowl and top with all the toppings and enjoy!
