The peaches soften as you bake them so every bite is deliciously satisfying. Best of all? it’s like having dessert with dinner! Ingredients: 6 peaches (canned or fresh) ½ cup sugar ½ cup sliced almonds (blanched) 6 large Amaretto cookies (or macaroons) – broken 1 egg yolk ⅓ cup Amaretto liqueur Method: In 350 degree oven bake 20-25 minutes. Butter your baking dish, cut peaches in half, scoop out 1 Tbsp pulp from each half. Process the pulp, sugar, almond cookies, yolk and liqueur into fine paste. Stuff peaches with the filling. Arrange peach halves in the buttered dish and bake. Serve warm or room temperature. — Scott Wardell
