Ingredients

Smithfield® Hometown Original Bacon 16 slice(s)
Home-style refrigerated buttermilk biscuits 16 oz.
Large eggs 8
Hot pepper sauce if desired 1 ds.
Salt, to taste
Pepper, to taste

Instructions

  1. Preheat oven to 350°F.
  2. Spray 8 jumbo muffin cups or 8 – 6 oz. glass custard cups with cooking spray. Set aside.
  3. In a medium skillet cook bacon over medium heat for about 4 minutes or until cooked, but not crisp-turning once. (It will continue to cook in the oven).
  4. Separate dough into 8 biscuits. Place one biscuit in each muffin cup, pressing dough 3/4 of the way up sides of cups. Place 2 bacon slices in each biscuit cup, and crack an egg over each cup. Season each egg, with salt and pepper and hot sauce, if desired.
  5. Bake 25 to 30 minutes or until egg is done to your likeness and egg whites are set. Run a table knife around the cups to loosen. Serve immediately.

Tips to Stretch Your Dollar

Got any bacon left over?  Don’t throw it away! Cooked bacon lasts an extra four to five days in the fridge when placed into a storage container with a paper towel. This prevents the bacon from becoming soggy. As for biscuits that went untouched: Place them into a container with a paper towel to soak up excess moisture and keep your biscuits tasting fresh. They’re great for reheating in the oven at 350°F for eight minutes.
