Ingredients

Eckrich® Turkey Skinless Smoked Sausage, chopped 1 pkg(s)
Onion, chopped 2 whole
Green pepper, chopped 2 whole
Dry pasta, your choice 1 lb.
Garlic, chopped 2 clove(s)
Can chili beans, undrained 16 oz.
Can diced tomato, undrained 14 1/2 oz.
Beef broth 1 cup(s)
Package taco seasoning 1 oz.
Mexican-style four cheese As needed
Parsley, chopped As needed

Instructions

  1. Cook pasta.
  2. Brown turkey sausage in oil over medium heat. Set aside.
  3. In same pan, brown garlic, onion and green pepper in a little more oil.
  4. Stir in chili beans, tomatoes, taco seasoning, beef broth and simmer. Add cooked pasta and sausage. Top with cheese and parsley if you like. A salad is the perfect sidekick.
  5. You can substitute chili beans with bean of choice but add one teaspoon of paprika and one teaspoon of chili powder.

Use leftover mac and cheese to create fried mac and cheese balls. Roll one-inch diameter refrigerated mac and cheese balls into panko bread crumbs and fry in hot oil for four to five minutes.
