Keep your dinner routine hassle-free with these slow cooker pulled pork tacos. Created by Leah Singer of Leah’s Thoughts (she’s also Red Tricycle’s San Diego Editor), these pulled pork tacos can be prepped in the morning and by evening they’re ready to serve. Pick up toppings like cheese, salsa, lettuce or avocado and let your kids create their own.

Ingredients:
1 – 11/2 pound pork tenderloin or shoulder
1 cup chicken stock
Juice of one orange and/or lime
1 teaspoon garlic powder
1 teaspoon cumin
salt and pepper

Method:
1. Throw that piece of meat in the crock pot and add chicken stock, juice of one orange and/or lime, garlic powder, cumin, salt and pepper.

2. Then cover the crock pot and let it cook on high for six hours. At that point, turn the heat to low and let it sit another hour. You’re basically trying to get the meat to the point where it can easily be shredded with a fork.

3. To assemble the tacos, use small corn/flour tortillas as the base, then top the meat with pico de gallo, mashed avocado and queso fresco cheese.

Are there are already a number of businesses that cater to your market and, if so, how will you differentiate yourself? If you’re the first to market, is there an actual need or how will you communicate that there should be? Also – is your location a match with your offering and pricing?

RT: Can you give us one tip for balancing entrepreneurship with parenthood?

JR: Balancing any type of work with parenthood is difficult. The key for me has been having as much help on both sides of the equation as possible. I have a 40 hour a week caregiver for my child in addition to several employees at Purple Monkey.

RT: What is your proudest moment as a business owner or parent?

JR: My proudest moment was being nominated for my first Red Tricycle Award in 2012! I received an email that I was a Top 3 finalist in both the Indoor Playspace and Birthday Party categories without ever having asked for anyone’s support. I took that as a signal that people were really enjoying what Purple Monkey had to offer.

For all of you moms and dads who grow just a few extra white hairs at the mere thought of throwing an amazing birthday party, we’ve uncovered an awesome (and one you can totally DIY) theme for your kids next bash: a camping-style birthday. We recently sat down with Kelly McLeskey Dolata, the founder of A Little Savvy Event, who dished to us about this impressive first birthday party for the lucky tyke, Greyson. Kelly was even generous enough to provide us with photos of this outdoor soiree to help all you parents get inspired.

Greyson’s first birthday was inspired partly by him and partly by his parents. Greyson is a total “boy” and according to Kelly, his Dad is a fishing fanatic so it made sense to plan an outdoorsy/sportsman-themed birthday party. We love this theme because even if your family aren’t fishing enthusiasts, throwing an outdoor/camping-style birthday can totally work, especially during the warm summer months.

We love all the thematic signage at Greyson’s party. From the “Welcome to Camp Greyson” banner to the “Happy Birthday” and “Let’s Go Fishing” signs, once you enter the birthday area you know you’re at a camping-themed party.

If you want to get crafty, you can make the banners at home with paint and markers (the kids can help too) or Kelly suggests using Andrea at Print Your Party. According to A Little Savvy Event, Print Your Party is a great source to work with for the DIY enthusiast. She will collaborate with you to create a custom design theme and create template for you to print on your own (all you need is a printer!). She does label tags, straw tags, flags, large signs and invitations.

With the warm summer months upon us, throwing an outdoor birthday party is a great idea. Greyson’s took place at a local park in Sonoma because the birthday boys’ family wanted a casual outdoor setting that provided easy access for his party guests. Another alternative is to throw the birthday party in your own backyard.

Let’s face it — for first birthday parties, the fiesta is just as much about the birthday boy as it is about the parents being able to get together. The round tables (pictured above) are great for allowing big groups to sit together and mingle. And, a table with food makes grabbing your meal easy and hassle-free.

We all know that kids have a short attention span sometimes and it is important to have interactive activities to keep everyone happy and entertained. For Greyson’s party, A Little Savvy Event set up a fishing hole to tie into the overall theme. Guests could grab a homemade fishing pole and cast it into our pool full of fish. This was a huge hit with Greyson’s friends who were elated to catch a fish!

For those DIY parents, this “fishing pond” is a kiddy swimming pool. The fish were found at Target and then all you have to do is add a magnet (the fishing pole was fastened with an opposite magnet so they would connect!).

According to Kelly, the trail mix bar is an easy and healthy party favor for guests and it also doubles as an activity station. Your guests will love to mix their own combinations of ingredients to take home.

The goodie bags are stuffed with Luna Bars, swedish fish, a mini coloring book and crayons and Fish shaped lolli-pops.

For those kiddos with a winter birthday, Kelly suggests hosting a sleep-over type party complete with tents and forts in your very own living room. Other ideas are making a make-shift s’mores station and roasting marshmallows over candlelight. What could be better than a tent, sleeping bag and a cup of hot cocoa with your friends?!

Greyson’s birthday party featured multiple sweets. Below are photos of the bundt cakes that included pancake w/maple syrup butter cream with bacon toppings & s’more flavors. There are also fish cookies. Yum!

Even Greyson’s cake featured an outdoors/camping theme. If you want to make your own, mix some green food coloring with vanilla frosting and voila, you’ve got yourself a green frosting base. You can create the makeshift tent with graham crackers, the logs with pretzels, and you can buy the trees at a crafting store.

While we all love our Oregon Coast, sometimes there’s nothing like a hassle-free trip to the pool where your kiddos can splash and play and you can kick back in a lounge chair beverage in-hand. If you’ve exhausted all of your local spray parks and swimming holes and aren’t keen on the gloom of the coast (after all, there’s a reason they don’t call the Oregon ocean a beach!), head on over to Sunriver in Central Oregon for some fun in the sun.

What You’ll Love: 
With outdoor and indoor pools, a lazy river, two water slides, an obstacle course, an outdoor hot tub (adults only!), fountains and a toddler pool and sand area, this kicks the whole concept of “a pool” up a notch. The sand and water area is perfect for little ones as they can scoop, dig, splash and wade to their hearts’ content. And you will love that the entire area is fenced, so you can veg while the kiddos splash in the eight-inch pool and dig in the beach-worthy sand. Once they are ready to venture to the glorious pools, you’ll be thrilled to discover that both pools and the lazy river feature zero entry — perfect for your little ones!

Be the Smart One:
The only drawback to this watery paradise? At peak times, it can be crowded. But since chances are good your gang has been up and ready since 7:00am anyway, just try to arrive right before it opens to snag an umbrella and a lounge chair — though, let’s be honest, there’s not much “lounging” with the kiddos running around.

What Not to Miss: 
Before nap time, hit the upscale locker room/bathroom facility which sports a super cool feature: an appliance that functions like the spin setting on your dryer, so you don’t have to lug home sopping wet suits and towels.

Insider Tips:

  1. Food at the pool is restricted to the café area, which is appreciated by all: who wants goldfish swimming in the pool? But hungry tots – and smart families – know that they can head just outside to the on-site picnic pavilion near the playground, which offers shade and an escape from crowded pool action.
  1. Parents will crave the upscale “restaurant style” salads and sandwiches offered at the café, which also features all your typical kid faves (hot dogs, burgers, chicken strips). Waits can be long, so plan to order before tummies are rumbling!
  1. Disposable swim diapers are not allowed, but they conveniently sell “reusable swim diapers” at the front desk for $7.50.

Hours:
Open swim is 10:00 am – 8:30 pm daily through the end of September. If your little guys are not yet in school, check it out the week after Labor Day. The weather is perfect and the whole world, it seems has deserted the High Desert, offering you quiet pool bliss.

What it Costs:
It’s not cheap, but it’s worth it. Before you rent a place, ask if SHARC passes are included. Many houses include them and all resort guests get in free. Not so lucky? Day fee for adults is $25; ages 5 – 18, $20; four and under, free. There will be a reduced rate after Labor Day: $18/15.

It truly is the Happiest Place on Earth, and even to those first-timers daunted by the thought of Disneyland, it’s totally worth it, with a bit of planning. These tips will help you make the most of your family vacation—whether it’s a day trip from Los Angeles or San Diego or a journey from the Northwest.

Timing is everything
As you’re sifting through the family calendar in search of the perfect day, be sure to keep in mind the months when crowds are smaller–namely late fall, early spring and the winter months. Remember, it is Southern California so February is not that cold! The holiday season is particularly delightful as Disneyland transforms into a wintry wonderland with thousand of twinkling lights, a huge Christmas tree, and a fantastic fireworks show each evening. If you’re heading out during the school year, avoid the crowds by checking the local school district calendar for days off.

Where to Stay
Yes, it can be a fantastic experience to settle into one of the Disneyland Resort Hotels as they offer great perks such as convenience, character breakfasts and early park entrance. But there are more affordable and equally convenient options with the nearby Good Neighbor Hotels. The Tropicana Inn is a great choice as it’s a five minute walk from the resort—a perfect option for nappers. Plus, if they have availability, the hotel will give you a later check-out for a moderate surcharge. It’s a great option for local Angelenos as it provides a home base during your Disney day (with a one-night stay).

Ticket Tape
Instead of shelling out the full price at the gate, check for deals at Costco. The wholesale company often has multiple day deals that add up to big savings. If the deals apply only to Los Angeles area residents (it happens sometimes), start thinking about who you know in LA! Don’t you owe them a phone call?

What to Bring
Park rules say you cannot bring in food or drink to the theme park, but countless parents tote in snacks and drinks (including bottles) without any problem. Considering how much a bottle of water costs, it will help your bottom dollar tremendously to BYO and will give you a little extra for splurging. If you decide to bring lunch food, there are lockers just outside the gates (as well as inside) where you can store more items. You may also rent a stroller if you don’t want to lug yours on the airplane. And lastly, pick up some glow sticks at a local drugstore before you come so when night falls you can break out dozens and do up the kids. You’ll be glad you did when you see the hideous prices charged by the park for their glow gear.

Plan Ahead
The World of Color water and light show in California Adventure’s Paradise Bay is not to be missed. Ensure great seats by making a reservation at either Ariel’s Grotto or the Wine Country Trattoria. The prix fixe menu ($18.99-39.99/person) includes tickets to the preferred viewing section—up close and totally worth it. There’s also a picnic lunch option available ($15.99/person) with great seating as well.

Be Prepared
Avoid impatient kids and aching legs by scouting for short lines. You can get real-time info on which rides have the shortest waits by downloading an app for your phone. Check out Ride Hopper Lite, Parktastiq Disneyland iGuide, and Disneyland Mousewait.

Fast Times
Fast passes are the key to an efficient visit. These passes give you a specified time to return–say from 9:00 am – 10:00 am–and allow you to slip into a shorter, designated line. There are about 100 for each time slot, so the passes go fast. If you miss your time, you can go back later. Remember, you can only get one at a time, so work with your line app to create a plan of attack. Buzz Lightyear and Woody fans, listen up: Adventureland’s Toy Story Mania ride does not have the fast pass option, so hit it the first thing in the morning when lines are the shortest.

Day One
Begin the day by taking the monorail to get the lay of the land. The kids will get amped seeing all the rides and will be able to get an idea of what they don’t want to miss and it’ll help you navigate your way through the park. Kids particularly love It’s a Small World, Dumbo the Flying Elephant, Casey Jr. Circus Train, the Storybook Land Canal Boats and the parade at the end of the day!

Pit Stop
A crucial resource for parents of little ones is the Baby Care Center (also known as the Lost Children Center…always a good thing to know about!). Complete with private breastfeeding rooms, plenty of padded changing stations, little potties, and little to no wait for these, as opposed to the other restrooms, this clean, quiet spot is worth planning your pit stops around.

Trading Up
If your kiddo’s into collectibles, you’ll want to consider the pin trading program. It’s a good way to get your children to interact with Disney employees, display mementos of their favorite characters with pride, and break the ice with fellow tots. Want to save a bundle? Invest in a bulk load of trading pins on eBay ahead of time. They run nearly $7 a piece at the park. For two kids, 30 pins is a good number over a 2-day trip.

Where’s Mickey?
There are hundreds of Mickey Mouse silhouettes throughout the park, make a daylong game out of finding the hidden Mickey’s. To get a jump start on it, hit up a couple online sources like the Hidden Mickey Guide (or check that app you downloaded) and lead your little spies in the right direction.

Autographs!
If your child is a total Mickey fanatic, be sure to show up at Mickey’s House in Mickey’s Toon Town, with an autograph book (sold at the park) and a black Sharpie (better than the pens sold with the books). Also, hit up the Princess Fantasy Faire for a signature from one of the Disney princesses…sometimes the lines get too long at their other appearances at other spots in the park to give autographs to all the kids waiting.

Breakfast With the Stars
Another way to ensure that your kid gets to meet his or her most treasured character is to book a spot at one of the character breakfasts. They have them at the PCH Grill and Goofy’s Kitchen, among others.

Parental Controls
Think that Disneyland with the kids equals no fun for Mom and Dad? Think again! It’s a little known secret that adults with kids in tow don’t have to stand in line at the adult-only rides like Space Mountain. Simply let the people working the ride know you’re with your family and they’ll steer you off to a shorter, designated line. Then mom can take a spin while dad watches the kid and then switch it up for the next ride.

Foodie Favorites
There are some items worth splurging on, such as the Corn Dog Cart. Dog aficionados consider Disneyland’s corn dog cart to be one of the best you’ll find (hence the line). The cart is usually located on Main Street, near the first aid center. The enormous, footlong dog is cooked to order, yum. Another favorite is the Dole Pineapple Whip just outside the Tiki Room. And no trip to Disneyland is complete without a Churro, it’s a must!
