If your kids think that milk, butter and cheese come from the grocery store shelves, it’s time to open their eyes to everything dairy farm. Recently, Red Tricycle Seattle writer, Helen did just that. She went on a WA Dairy tour to learn how dairy products are made. Not only did she get to visit with some happy cows, but Helen also learned that Washington state produces some of the highest-quality dairy products around (bonus: all of the milk is rbST free). So, the next time you’re at the grocery store take the opportunity to educate your kids about where their food comes from and then whip up one of these dairy-friendly recipes. Danish Vanilla Bean Confetti Sandwiches

You haven’t tasted a real ice cream sandwich until you’ve made one yourself. Take a peek at this delicious recipe that comes to us from Snoqualmie Ice Cream.

Yields 7-8 sandwiches

Ingredients:
2 Pints Danish Vanilla Bean Ice Cream
1 ½ Cups flour
1 tsp. baking powder
1 tsp. cream of tartar
½ tsp. baking soda
½ tsp. salt
½ Cup unsalted butter, room temperature
¾ Cup pure cane sugar
1 vanilla bean
1 large egg
1 large egg
1 tsp. vanilla extract
½ Cup sprinkles

Method:
1. In a medium bowl whisk together flour, baking powder, cream of tartar, baking soda, and salt. Set
aside.

2. In the bowl of an electric mixer with a paddle attachment, beat the butter and sugar at medium speed until light and flu y. Split the vanilla bean and scrape the seeds into the butter mixture. Add the egg and vanilla extract, and beat until combined.

3. Reduce the mixer speed to low, and slowly add the dry ingredients into the wet ingredients until just
combined. Fold in ¼ Cup of the sprinkles.

4. Place the remaining ¼ Cup of sprinkles in a bowl. Scoop about two tablespoons of dough and roll it into a ball. Roll the ball in the bowl of sprinkles to cover. Put the balls on a plate. Repeat with the
remaining dough. Chill the dough for at least two hours or over night.

5. Preheat oven to 350°F. Line two baking sheets with parchment paper.

6. Transfer the chilled dough onto the prepared baking sheets, spacing 2 inches apart.

7. Bake cookies until they are just beginning to brown around the edges, 8-10 minutes. Let the cookies
cool completely.

8. When cookies are completely cool scoop ice cream onto the bottom of half of the cookies. Place
second cookie on top and squeeze down gently. Immediately place all of the sandwiches in the freezer
for at least one hour. When ready, take sandwiches out of the freezer and serve immediately.

The bright and simple space is set with long communal tables and oversized stools, and an incredibly cool and colorful yarn installation adorns the main wall and may inspire a game or two of Cat’s Cradle. Be sure and check out the tree out front as well, which is wearing a colorful striped sweater knitted by the same artist. And although pretty as a picture, the space is decidedly casual, so young kids wandering the room or older ones getting goofy with their friends are common sights. Guests order at the counter and take a seat wherever they please—on warm days we recommend the benches built around the sweater-wearing tree up front.

Eat Easy

Both the sparkling red and white varieties have that effervescence we all love, and a bright, crisp taste. There are no artificial flavors or colors, and no added sugar. Cool Mama packs spearmint for a brisk pick-me-up. Ready Mama is a palatable mix of raspberry leaves and rose petal that are fragrant and full-bodied (and taste great iced!). January 19 is National Popcorn Day. While some like to celebrate with popcorn related activities like popcorn air hockey, popcorn relay races, and popcorn haikus, we at Red Tricycle have a different suggestion: How about just eating it? Calling themselves Popcorn Artisans, this is a Greenwich Village spot that takes their corn making very seriously. Favorite hand-crafted flavors include Ginger Caramel, Raspberry, Cinnamon, Sundried Tomato, Smoked Jalapeno and Garlic Rosemary. For those having trouble making up their minds, samplers are also available.

Good to Know: Perfect for the civil-minded. Once you purchase your first gallon tin of popcorn, you can keep returning to have it refilled, adding a little fun and flavor to your recycling!

Kettle Corn NYC
It’s a quintessential New York Story: Fresh faced youngster comes to New York City with nothing but some unpopped corn, and a dream. Fresh faced youngster opens Kettle Corn truck to drive around the city, hawking his wares. Kettle Corn truck gets stolen.  The now jaded, formerly fresh faced, youngster decides – no more! And proceeds to sell his popcorn on-line. Along the way, his flavors of Cherry Chocolate, Sour Cream and Chives, Cotton Candy, Frutti Bam Bam, Egg Nog and Spicy Ranch pick up the Food Network’s seal of approval as New York’s Tastiest Popcorn. If you can make it here, you can make it anywhere…with or without a truck.

Good to Know: In addition to their on-line shop, Kettle Corn NYC runs stands at NYC street festivals all summer long. Keep an eye on their schedule and, odds are, they’ll eventually land on a block near you (alongside those knock-off T-shirts and bargain bundles of socks).

Of course, no overview of popcorn options could be complete without mentioning the family’s primary site for chewing down: Movie theaters.

The temptation is to assume that all theater fare is the same (over-greased, over-salted, and possibly several days old, to boot).

However, a few movie palaces in New York do buck the trend, offering not merely palatable, but downright tasty snacks along with your cinematic escape. Try:

  • The Film Forum. Not only do they pop fresh and top with only peanut oil and sea-salt, but they also host a Film Forum Jr. of classic movies like “The Red Balloon” and “King Kong” just for kids!
  • IFC Center brings organic kernels and real butter to the table, along with flavorings like cinnamon sugar, and documentaries like the popular 7 Up series you’ll be hard pressed to find screening anywhere else.
  • Of course, when nothing but a chain will do, opt for Landmark Theaters. In New York City, they offer their trademark Rattle & Reel Screenings where adults pay full price, but babies are free… and, more importantly, welcome, along with their popcorn cooked in coconut oil and topping selections of sour cream and onion, jalapeno, barbecue, Cajun, apple cinnamon, chocolate marshmallow and more!
