These kid-pleasing chicken wings from Amelia of Simple Provisions couldn’t be easier to pull off—there’s no need to heat a big pot of oil or mix up an elaborate sauce. Between the quick prep time and the satisfying payoff when you pull them out of the oven, these are bound to become a staple in your weekly meal plan.

1/4 cup vegetable oil (plus more for oiling pans)
4 pounds chicken wings, cut in half at the joint, wing tips removed
8 large scallions, chopped
1/4 cup chopped, peeled, fresh ginger
Juice of half a lemon
2 teaspoons chili flakes (more if you like it spicy)

1. Preheat oven to 450 degrees. Oil two large baking sheets and divide chicken wings between them. Season with salt.

2. Place the wings in the oven and cook for 35 minutes, rotating sheets and flipping chicken halfway through. The chicken should be cooked through and golden brown.

3. While your wings are cooking, place spring onions, ginger, 1 teaspoon salt, lemon juice, chili flakes and oil in a food processor and puree. When your wings are cooked, transfer them to a large bowl, add sauce, and toss to coat.

4. Return wings to a baking sheet and bake until set, about 10 minutes.
