Of course we had to include Seattle's iconic chain of walk-up window restaurants. The first Dick’s Drive-In opened for business on 45th Street in 1954. Today there are seven locations with only one of them offering indoor seating (Queen Anne). Nobody seems to care. Though the line might be long, orders are filled quickly. Other than the prices, the menu here has pretty much stayed the same with great burger, shakes and freshly-made hand-cut fries. Take the kids to experience that place where it all began.

Gotta grab bite: The Dick’s Deluxe. The quarter-pound burger is made with fresh beef, cheese, lettuce, mayo and pickle relish.

His bagels are unique because they contain sourdough culture as a leavening agent, but they are not “sour” per se. Just a deeper flavor than instant yeast he says. And although they had closed the window when the pandemic first hit, they just re-opened July 6 for walk-up service.

Dark Chocolate Zucchini Cupcakes (with All Natural Purple Whipped Frosting)

Tender, moist and delicious cupcakes with hidden veggies. Perfect for a morning birthday party or anytime you want to sneak in some extra veggies! They will never know…not to mention that ALL natural colored light and airy whipped frosting. What?!

Makes 12 cupcakes

Ingredients:

Cupcakes:
1 cup sorghum flour
¼ cup potato starch (not the same as potato flour)
¼ cup tapioca starch (same as tapioca flour)
1 ½ teaspoon baking soda
½ teaspoon Himalayan pink salt
3 ounces vegan dark chocolate (85% dark or more)
½ cup coconut butter (room temperature)
1 ½ cups date paste
½ cup full fat coconut milk mixed with 1 teaspoon apple cider vinegar (makes a vegan buttermilk)
½ cup finely grated zucchini
1 tablespoon vanilla extract

Purple Whipped Frosting:
2 tablespoons very cold date paste
top cream layer of 1 can full fat coconut milk (stored in refrigerator for 2-3 days or freezer for 2-3 hours)
1-2 tablespoons juice from frozen blueberries (depending on how dark you want it)

Note from the chef: I made many trials to get the consistency I wanted with these cupcakes, using a variety of flours that would make them nut free but still use a flour with some health benefits, along with being very soft, fluffy and moist. The measuring method I used was to spoon the flours into the measuring container then even it out with a knife. If you pack in the flour you may get a different result. Also, take note that the ingredients for the frosting, except the blueberry juice, are also in the cupcake recipe. Just measure out enough for both when measuring those ingredients. You can buy coconut butter or make it yourself by purely blending unsweetened, preferably not dehydrated, shredded or flaked coconut in a food processor or blender. It takes a while but will eventually turn into smooth coconut butter. There are many sources for directions online. The coconut milk I used was the Thai Kitchen brand. Although it has some guar gum in it, which isn’t my favorite, it is high in fat and creamier than most other brands out there. Make sure the coconut milk and date paste are very cold for the whipped frosting. The very cold date paste helps maintain the structure of the frosting.

Method:
1. Preheat oven to 350. Mix together coconut milk and vinegar to allow it to settle into a buttermilk and set aside. Make date paste if you haven’t, put 2 tablespoons in the freezer to get very cold for the frosting.

2. Combine flours, baking soda and salt in a bowl and set aside. Make sure you break up any clumps, using a whisk works well.

3. In a small bowl melt the dark chocolate with the coconut butter, making sure to melt slowly so you don’t burn it, and mix well. If using the microwave, melt for 30 seconds, then in 10 second increments until fully melted. It took me about 45 seconds. Once melted, add it with the date paste into a large bowl and using a stand or hand mixer, whip until mixed well. Add in “buttermilk,” zucchini and vanilla extract and whip again.

4. Using the paddle attachment on your stand mixer or a spoon, mix in dry ingredients putting in half first, then the rest. Make sure everything is combined well.

5. Place large spoonfuls of the batter into muffin tins lined with baking cups. Fill to just below the top of the cup. I use foil baking cups as they don’t stick like paper does. I also smoothed the batter down on the top by using a moistened finger, this helps them rise evenly as they bake.

6. Bake at 350 for 21 minutes. Depending on your oven, your baking time may vary by a minute or two. Start checking them at 17 minutes and take out when the tops begin to get firm and have a spring to the touch. Let cool in the muffin tins for about 10 minutes. Once cool to the touch, remove and continue cooling on racks until completely cool, about an hour.

7. While cupcakes are baking, take about ½ cup frozen blueberries and defrost enough to be able to squeeze the juice out of them. You still want them cold, if they are warm it will affect the structure of the frosting. If you accidentally get them too warm, just put the juice in the freezer to get cold before putting it in the frosting. Make frosting by placing all ingredients into a large bowl and whipping well using stand or hand mixer. Keep whipping until light and fluffy. The frosting will come out best if both the coconut cream and date paste are very cold. A few hours in the freezer works best. You want it just before it freezes.

8. After cupcakes are cooled, put frosting in a plastic bag, cut off a bit of the corner and squeeze out to frost each cupcake. Enjoy! It’s best to frost right before you eat them because the frosting will soften if it’s too warm outside. If storing, store in the fridge to maintain the frosting.

First Step: Make the Family (Virgin) Piña Coladas

Channel tropical island vibes with 1950s inspo from Caribe Hilton — an iconic resort in San Juan, Puerto Rico that coined the original Piña Colada recipe. Caribe bartender Ramón “Monchito” Marrero created the drink in 1954 while mixing tropical fruits to come up with a refreshing welcome drink for hotel guests. The first Piña Coladas were non-alcoholic and made in a shaker (blenders didn’t yet exist). It wasn’t until years later that Monchito added local rum to his concoction and created what’s known as the world’s most popular vacation cocktail.
 
After serving the Piña Colada for 35 years, Monchito’s signature beverage was declared the official drink of Puerto Rico. Using the recipe below, families can recreate the original Piña Colada (hold the rum!) for the ultimate ‘mocktail’ that’ll have everyone in your house day-dreaming of sunshine, sand, and palm trees. 
 
Caribe Hilton’s Original Piña Colada (Virgin!)
1 oz. coconut cream
1 oz. heavy cream
6 oz. pineapple juice 
½ cup crushed ice
 
Directions
Mix cream of coconut, heavy cream and pineapple juice in a blender. Add ice and mix for 15 seconds. Serve in a 12 oz. glass and garnish with fresh pineapple and a cherry. Parents can add 2 oz. of rum to create the signature libation.

Traditional Easter plans may be going out to pasture, but how about a visit to Jerusalem's Western Wall? Some believe this wall is a direct line to the big guy and visitors come to pray and write prayers on bits of paper they place in cracks of the wall. Twice a year, these written prayers are collected and buried in the cemetery at Mount of Olives, a mountain ridge adjacent to the Old City that's been used as a Jewish cemetery for over 3,000 years. Be introduced via live webcam one of the most popular attractions in Rome, the Piazza di Spagna with views of the Spanish Steps and Bernini’s Fountain of the Ugly Boat. You can even hear the soothing sounds of the fountain flowing with the square emptied. At the right-hand corner of the Spanish Steps is the home of British Poet John Keats, who gave us the quote, "Do you not see how necessary a world of pains and troubles is to school an intelligence and make it a soul?" Seems fitting for these times.

With over 2,000 years of history, the Roman Colosseum has over 6 million visitors per year. After it's completion in the year 80, it allowed more than 50,000 people to view exotic animals, executions of prisoners, recreations of battles and gladiator fights. You won't see any of that now, but via the Colosseum live webcam you can visit this wonder of the world and the ruins of the gladiator gymnasium.

Trader Joe's popular make-at-home pizza dough is an easy way to impress your family on the fly. Combine a little tomato paste with garlic, olive oil, fennel and thyme, and then spread the mixture on your shaped dough. Then, sprinkle your choice of cheese (we prefer a blend!) and top with thin slices of prosciutto. You can fancy it up even more with arugula or figs. It takes less than 20 minutes to bake.

Try a twist on the classic lobster roll! Sprinkle scallops with salt and pepper, and saute in butter. Then tuck them into a squishy hot dog bun with some greens and a dollop of mayo or a tangy tartar sauce. You may not actually be lounging at the seashore, but with this recipe, at least you can pretend you are. Perfection.

Trader Joe's has a great selection of ravioli, but topping it with marinara can get old. By adding steamed spinach, peas and melted Boursin cheese, this pumpkin ravioli now has three veggies (and they all taste like cheese!).

Kid-Friendly Curry

Expose your kids to a taste of Thai with this easy recipe. Mix a can of coconut cream (also available in a low-fat version) with a bottle of Trader Joe's Thai Red Curry Sauce and simmer. Cube some of Trader Joe's pre-cooked all natural chicken breast to throw in the pot, and serve over their three-minute rice. You can also add steamed spinach!

Fortified Mandarin Orange Chicken

You know your little foodie will gobble this one up no matter what the season. So why not turn it into a filling dish that meets your kiddo’s daily veggie requirement too? It’s easy to beef it up with winter greens like broccoli, peas and green peppers. Follow SOP for stovetop prep when you’re cooking the chicken and sauce. Throw in chunky green peppers and broccoli florets for the last few minutes, and cover your saucepan so they steam a bit, and then swirl in a handful frozen green peas just before you serve. Your little chef won’t know what hit her!

Tortellini Soup with Kale & Sausage

Wondering how to use up all that kale sitting in your bin? This simple stew-like recipe is perfect for cold winter nights, and the kids love it! Simply saute white onion and the sliced up sausage in a bit of olive oil until the onion is soft and the sausage has browned. Add the chicken stock or broth and bring to a boil. Then, add the tortellini and reduce heat to a simmer for about four minutes. Finally, toss in the chopped kale, let it wilt and then top with parmesan cheese. 

Delicious Pulled Pork Tacos

Trader Joe's Pulled Pork can be made in the microwave in three minutes and makes a super-tasty base for these tacos. Add your favorite toppings, but don't skip the Roasted Tomatillo and Mango Salsa, which adds some tang and spice.

Pesto Pasta with Shrimp

Pesto is the star of this easy pasta recipe that will definitely earn a spot in the summer dinner rotation. Mix your favorite cooked pasta with shrimp and garlicky pesto. Add chopped fresh basil and tomato with a sprinkling of grated parmesan for an extra blast of favorite summery flavors.

Classic Fondue

Trader Joe’s is on a mission to bring fondue back. We’re loving it because busy parents can throw this cheesy meal together faster than your Insta-pot can say “ready, set, go!” Simply heat a container of Trader Jacques’ La Fondue (made with three savory kinds of cheese) in the microwave for about five minutes. Let it sit for one or two more, and then bring it straight to the table (psst … no dishes or special cookware are part of this easy-peasy meal’s appeal), where you can have fresh fruit, veggie, and French bread pieces waiting. The only thing that would make this meal better is a matching container of chocolate fondue for dessert!

Asparagus Risotto with Chicken

This one-pot meal takes less than 15 minutes. Warm up some asparagus risotto on the stovetop (this usually takes over an hour to prepare!), slice up Trader Joe's pre-cooked seasoned chicken breasts, and add to the risotto at the last minute to warm it up. Serve with a salad and dinner's done/

Sunset Luau at the Catamaran
If your’e dreaming about a trip to Hawaii, add this San Diego tradition to your summer bucket list. The annual Sunset Luau events at the Catamaran Resort and Hotel are a festive celebration of Polynesian food, music and dances perfect for family and friends. Luau guests are treated to a beautiful lei upon arrival and a fruity Mai Tai (or fruity drink for the under 21 guests).

What’s on the Menu
Before the entertainment starts, indulge in a tasty all-you-can-eat buffet that includes authentic Polynesian tastes, including Kalua Roast Pig. There’s also tropical fruit, roast salmon with ginger lime cream sauce, Island pineapple coleslaw and guava chicken.

And that’s just for adults. Kids will love their own buffet with pineapple Jello, fresh fruit, Hawaiian pizza, coconut-crusted chicken strips and tater tots. Dessert for the young and not-as-young include pineapple upside down cake, coconut cream cake, passion fruit creme brulle, mini macadamia nut tarts and haupia.

Insider Tip: While the food is delicious and there’s quite an abundance of it, many of the dishes include meat (even in the kids buffet). So if you’re a vegetarian, make sure to plan ahead and expect fewer choices.

Family Fun and Entertainment
Local luau specialist Pride of Polynesia provides the authentic island music and dance. The performance includes hula and fiery torch dancers. Kids will love the fast-paced music and interactive entertainment. In fact, the Sunset Luaus have been known to call all the kiddos up to learn the hula on stage.

Insider Tips: Stick around after the Luau ends to watch the Sea World summer fireworks across the bay. You can also grab a photo on the Catamaran lawn with the Polynesian dancers and performers after the show.

And don’t think the amazing animals are limited to the Bahia Resort Hotel! Check out the taking birds at the Catamaran. Cockatoos, parrots and macaws await!
