Hulu Debuts “The Hardy Boys” Trailer

Raise your hand if you’ve ever eaten something unhealthy because you felt stressed. During my trips to the supermarket, I have been shocked to see so many grocery carts overloaded with junk food. I understand that people are tired and seeking comfort. But tater tots and ice cream won’t help. In the past, I’ve turned to food to bring me solace. But in hindsight, I learned that when you eat poorly, you feel worse so you eat poorly again. After two slices of pie, you might as well eat the whole thing, right? It’s a downward spiral!

Cleaning up your diet may help you feel better physically and emotionally. If that’s still not enough to motivate you, here are my 3 favorite food categories that I reach for whenever I’m stressed. Comfort foods don’t have to be junk. And healthy foods don’t have to be boring (see below for 2 of my favorite recipes that prove just that).

Foods I Reach for When I’m Stressed:

1. Food with Fins. Meat prices are skyrocketing and there’s talk about shortages. Meanwhile, there’s been a spike in seafood consumption. But I still hear from people who are afraid to serve fish at home because they don’t know how to prepare it. Really, it’s easy. Just saute it at high heat until it changes color and flakes easily. Total cooking time would be about 8-9 minutes for thick fillets, and 6-7 minutes for thinner fillets.

  • Make sure to use the right oil. Some oils become carcinogenic at high heat. Malaysian palm oil is ideal for fish because it has a neutral, buttery flavor. Plus it’s heart-healthy, nutritious and certified sustainable.
  • Choose sustainable fish. We’re all attuned to shortages right now. Get into the habit of making responsible choices that help protect our food supplies and our planet. The American seafood industry generally has better sustainability practices than those of other countries.

2. Food from the Soil. There’s no shortage of fruits and vegetables. Because they are rich in fiber, you’ll feel fuller so you’re less likely to want to snack. Consider serving plant-based proteins a few times each week instead of animal proteins. You may know that beans and legumes have a lot of protein. But I’ll bet you didn’t know that there’s also protein in whole grains, broccoli and sweet potatoes. So, challenge yourself to create the most colorful plate of food possible.

  • Make sure you’re always eating a variety of foods. Consider what you ate yesterday, and try not to eat it again today.
  • Opt for fresh or lightly processed. Many over-processed foods, even those sourced from plants, can contain too much sugar and salt. Even if it’s made from plants, you still need to read the labels.

3. Food That’s Fun.

Keep the kids from going stir crazy by getting them into the kitchen. Instead of swinging into another drive-through, teach your kids how to choose and prepare foods on their own that will keep them occupied and sharpen their minds.

  • Plant a garden with kid-approved brain foods such as strawberries, tomatoes, sweet potatoes, carrots, spinach and broccoli.
  • Encourage them to sample new things. Have your kids research traditional foods and meals in different parts of the world. Then ask them to share what they’ve learned around the dinner table. It’s a wonderful way to take your family on a culinary adventure while you’re all stuck at home. For instance, my kids know that I only cook with palm oil produced in Malaysia because it is certified sustainable; it’s made without harming wildlife or rain forests.
  • Have enough measuring spoons and measuring cups so that each child can use their own. That speeds up meal prep time. Kitchen shears are safer for kids to use than knives.

If you feed your family junk food, your health will pay the price. But you don’t have to be a slave to your stove. Do what I’ve done and try eating just fresh foods for a couple weeks. Pay attention to how eating different foods makes you feel, not just in the moment but also the next day. Then slowly introduce processed or sugary foods back into your diet and see how you feel. Once I cleaned up my diet and realized how great I felt, and how much clearer my thinking was, it became easier to kick my favorite junk foods to the curb, permanently!

Here are 2 of my favorite comfort foods that are healthy to boot:

Chicken “Palm-atta”

Ingredients:

  • 2 skinless and boneless chicken breasts, butterflied and then cut in half
  • Sea salt & freshly ground pepper to taste
  • all-purpose flour, for dredging
  • 4 tablespoons unsalted butter
  • 7 tablespoons Malaysian sustainable Red Palm Fruit Oil
  • 1/3 cup lemon juice, fresh
  • 1/2 cup chicken stock
  • 1/4 cup brined capers, rinsed
  • 1/3 cup Italian parsley, chopped

Directions:

  1. Season chicken with salt and pepper. Dredge chicken in flour and shake off excess.
  2. Place a large sauté pan over medium-high heat and melt 2 tablespoons of butter with 6 tablespoons Malaysian Red Palm Oil.
  3. When butter and oil are hot, add 2 pieces of chicken and cook for 3 minutes. When chicken is golden, flip and cook for 3 more minutes.
  4. Remove from the pan and hold in a warm spot.
  5. Into the pan add the lemon juice, stock, and capers. Place on the burner and bring to boil, scraping up brown bits from the pan to deglaze for extra flavor.
  6. Adjust seasoning with salt and pepper if necessary.
  7. Return all the chicken to the pan and simmer for 3-5 minutes.
  8. Move chicken to platter. Add remaining 2 tablespoons butter and 1 Tbsp of Palm oil to sauce and whisk to emulsify.
  9.  Pour sauce over chicken and garnish with parsley.

Mashed Root Vegetables with Chevre and Chives

Ingredients:

  • 2 pounds celery root (celeriac), peeled and cut into 1-inch pieces
  • 1 pound parsnips, peeled and cut into 1-inch pieces
  • 1 pound Yukon gold potatoes, peeled and cut into 1-inch pieces
  • 5 cloves garlic, peeled
  • 4 tablespoons Smart Balance Spread, divided
  • 1/2 cup nonfat buttermilk
  • 1/4 cup Chevre goat cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper, freshly ground
  • 1/4 teaspoon nutmeg
  • 1/3 cup fresh chives, snipped

Directions:

  1. Bring 1-inch of water to a simmer in a large saucepot.
  2. Place celery root, parsnips, and potatoes in a large steamer basket over the water, cover and steam over medium heat for 20 minutes.
  3. Add garlic and continue steaming until the vegetables are fall-apart tender, 20 minutes more. Add more water if necessary.
  4. Drain the cooking liquid through a sieve and return the vegetables to the pan.
  5. Place over low heat and continue to stir for 3-4 minutes to steam dry.
  6. Add 2 tablespoons Smart Balance and mash until chunky-smooth.
  7. Gradually stir in buttermilk, chevre, salt, pepper, and nutmeg.
  8. Just before serving, stir in the remaining 2 tablespoons Smart Balance and chives.

Make-Ahead Tip: Prepare everything through Step 2 and refrigerate for up to 2 days. Reheat in a double boiler and stir in the remaining butter and chives (Step 3) just before serving.

Disney Parks Prices Just Went Up & Here’s What You Need to Know

Getting kids to make healthy choices isn’t always easy, but one mom’s simple snack hack to get kids to eat healthy has gone viral and you’re going to want to try it.

Mom and teacher Sarah Hornung recently shared her clever mom hack to Instagram with an image of her fridge stocked with containers full of healthy snacks. The post has since gone viral with thousands of likes and shares and it’s not hard to see why everyone thinks it’s so smart.

As Hornung explains in her post, each week she stocks these Dollar Store containers with healthy snacks, like fruits, vegetables, string cheese, yogurt and more. This makes grabbing a healthy snack incredibly easy. The thing that’s often difficult about eating healthy is that it can require prep, like peeling and cutting fruits and vegetables. This simple hack makes it easy to just grab and go.

“Everyone can relate to throwing out untouched produce at the end of the week and most parents find themselves in some kind of negotiation with kids over food on the regular,” Hornung told Good Morning America. “I have seen a lot of pictures of fridges and pantries on Instagram and Pinterest that are picture-perfect and filled with expensive, specialty items. I think my post appealed to the masses because it looks like most people’s fridges — just organized into containers I bought at a dollar store. I think it’s something that regardless of how old your kids are, what they like to eat or how much money you make, it is a doable idea,” she continued.

The other benefit of this clever snack hack is that it helps foster independence in kids. Having healthy snacks in easy-to-access containers makes it much easier for kids to hit the fridge on their own and make healthy choices without having to ask parents for help. Now that’s a win-win.

22 Lunchbox Hacks That’ll Help You Survive the School Year

Fans of Netflix’s sci-fi drama Another Life may remember the not-so-tasty fruit the crew sampled after landing on a somewhat Earth-like (except for the massive crustacean-esque creatures) planet. As it turns out, the alien fruit is a total IRL treat called rambutan!

So what exactly is rambutun? To start with, it doesn’t come from a distant moon––it’s actual origins are much closer, such as Guatemala and Honduras. You can get the fruit right now at some of your fave retailers, including Trader Joe’s.

If the the sci-fi version of the fruit was less than tasty, the real-world version is super-sweet. Rambutans, which taste like peeled grapes, only have around 10 calories each. But don’t try to eat the spiky skin! Peel your rambutan, toss the skin and pit and eat the lush insides.

HLB Specialties first introduced the fruit to U.S. consumers in 2016, and now it’s back from Aug. 22 through Sep. 14 at select Trader Joe’s locations, as well as Midwest and East Coast Walmart, Whole Foods, Meijer and Freshfield Farms stores.

Beyoncé

Queen Bey was spotted recently wandering the baby aisle at Target looking stunning as ever. While the rest of us might slum to the retailer in our best mom sweats, the mom of three may just have inspired us to step it up a notch.

Chrissy Teigen

Chrissy Teigen also has an exclusive collab with Target, so shopping at Target makes sense. But for the launch of her new kitchen line, she did more than just shop at Target—she actually worked at Target for a day, ringing up customers! Teigen also had some pretty funny thoughts about that whole “Beyoncé shopping at Target” news, too.

Joanna Gaines

With five kids in tow, we’re surprised Jojo doesn’t use curbside pickup or same-day delivery for her Target runs! It’s probably that whole amazing Hearth & Hand with Magnolia collab that keeps her coming in store.

Jenna Bush Hager

Jenna Bush Hager knows how to be resourceful and that includes covering up her locks something every Target aficionado has lying around: a plastic Target shopping bag! The TODAY Show co-host wouldn’t let a swim in the pool ruin her good hair day!

Serena Williams

Last summer, Serena let us all in on her shopping secret––shop Target at night! The tennis superstar prefers to shop late night to get in her Target fix and to try on all the swimsuits she wants without being bothered.

Britney Spears

Do you think Brit Brit is shopping for an anniversary edition of “Hit me Baby, One More Time?” The pop star and mom of two has to do her Target runs, too! Seriously—Britney really likes Target, according to court documents about her spending habits obtained by E! News in 2018.

Jessica Alba

Yup, this actress and mompreneur shops Target, too––after all, they were one of the first places you could stock up on The Honest Company products! She’s been spotted both solo and with her three kiddos in tow.

Jennifer Garner

As a mom of three, it’s no surprise that Jennifer Garner would find herself at Target constantly. Oh, and that whole new line of organic baby food (Once Upon a Farm) probably helps, too. We’ve seen plenty of smiles while she shops and can we please just be besties already?

Michelle Obama

In 2011, the then-First Lady was spotted shopping incognito at Target and it caused quite the uproar at the time. In 2015, Obama told Stephen Colbert “shopping at Target” was one of the things she was most looking forward to once she and her husband left the White House after his second term. $10 Meals You Can Make from a Target Run

As Beth Bornstein Dunnington walked through LAX, she noticed something that wasn’t totally unfamiliar. A young, seemingly pregnant, mom was trying to wrangle her toddler, who was having a very public meltdown.

You’ve been there: Your tot couldn’t care less about the flight that’s about to depart, and you’re stuck handling the flailing arms, banshee-esque screams and flying fists. And what do you do when something like this happens to you? Well, the mama in question ended up sitting on the floor crying, head in hands.

But the story doesn’t end there.

Dunnington chronicles what happened next on her Facebook page. Instead of just walking by, women started to congregate. And no, not to judge or mom shame the crying mother. Nope. These women were all about support.

She writes, “Then, this gorgeous thing (I’m crying just writing this)…the women in the terminal, there must have been six or seven of us, not women who knew each other, approached and surrounded her and the little boy and we knelt down and formed a circle around them.”

Providing as much support as possible, the women—again, strangers to this clearly overwhelmed mother—sang to the child, offered small toys, helped the mom find a sippy cup in her bag and even offered a bottle of water and a peeled orange.

Amazing. If it “takes a village,” I want to live there with these women.
