Prep Time: 10 minutes
Cook Time: 10 minutes (plus 25 minutes to chill and set)
Total Time: 20 minutes (plus 25 to chill and set)
Servings: 4

Ingredients:

  • 1 package Moser Roth Dark Collection 70% Cocoa Chocolate Bar, finely chopped
  • 1/2 cup Baker’s Corner Mini Semi-Sweet Chocolate Morsels
  • 1 package Beaumont Cocoa Hot Cocoa Mix
  • Spangler Candy Canes, crushed
  • Baker’s Corner Miniature Marshmallows

ALDI Hot Cocoa Bombs

Directions:

  • Prepare a double boiler over medium-low heat. Meanwhile, combine chopped chocolates and morsels in a small bowl.
  • Add half of the chocolate to the double boiler. Monitor temperature using a candy thermometer or other food safe thermometer. Do not allow chocolate to rise about 120° F at any point.
  • Once chocolate is melted and at 110-115°, remove from heat. In small batches, incorporate remaining chocolate. Be sure to melt what you’ve added prior to adding more.
  • Continue to monitor temperature and stir until temperature reaches 82°. Transfer back to the double boiler and bring to 91°.
  • At 91° remove from heat, add 2 tablespoons of chocolate to each half of the 3-inch silicone sphere molds. Tilt mold in all directions to properly coat the entire bowl. Let sit for 5 minutes. Reserve remaining chocolate.
  • The chocolate should have begun to set at this point. Use the back of a spoon to smooth out the inside of the half sphere. Chill for 20 minutes.
  • Peel molds away to release chocolate. Set aside.
  • Warm a small sauté pan over low heat. Lightly press one half sphere, open side down, on the sauté pan to even. Place back in mold.
  • Fill with 1/2 packet cocoa mix, and preferred amount of crushed candy cane and marshmallows.
  • Repeat step 8, instead pressing the halves together. Allow 5 minutes to set.
  • Bring remaining chocolate to 88°, drizzle over sealed bombs and decorate with remaining candy canes pieces.

These 4 NEW Fisher Price Sets Are a Sign of the Times

Last week, I was talking to a man who asked me if I thought women could have it all. You know, the whole shebang. The real deal. The DREAM. A beautiful family, a great career, a house with a white picket fence, and a dog that doesn’t jump on every person that enters the house. A great social life, a physically fit body with flawless makeup and a humanitarian.

I came to the quick conclusion that no, women cannot have it all.

We can make it look that way on social media, but we all know that’s not true.

He seemed very surprised at this answer coming from me.

As someone that embraces my mistakes and admits that I am in no way the perfect parent or wife or employee or human, I feel that women just can’t have it all.

At least not all at the same time.

Yes, we can have extremely successful careers and win awards and be on the covers of business magazines.

Yes, we can have husbands and children and pets and they can love us and we can love them and all can be great in the world.

Yes, we can be mentally solid and go to therapy and church and have a wonderful, relationship with our spiritual self.

Yes, we can have social lives and a great group of friends we see weekly and chat with while drinking wine, swapping CrockPot meals we will never make, and complaining about our kids.

Yes, we can be physically fit and exercise each day and drink enough water and feed our body healthy, nutritious food.

Yes, we can volunteer at our kid’s school and chair fundraisers and get silent auction items for the good of those that need our help.

Yes, we can have long shining locks, flawless eyebrows, kickass makeup, and nails that are always perfectly manicured.

So yes, we can have it all.

But no, we cannot have it all at once.

Those people that have tried have ended up burnt out and on the couch crying in dirty yoga pants with a pint of ice cream and a spoon while watching Pilot Pete get involved in all the girl drama on the Bachelor.

Why do I say this?

Because that person is me. I tried so hard to have it all. I thought that I could raise my boys, be a great wife, have a clean home, be a productive employee, volunteer with the best of them, exercise five days a week, get enough sleep and maintain a flawless manicure.

But I was wrong. I couldn’t do it all. I ended up constantly worrying and extremely overscheduled. It took a toll on my mental health and I was a hot anxious mess.

So I had to step back and take a look at what was the most important to me at that time. And I decided that I needed to put myself and my family first. I continued to raise my kids the best I knew how and made sure I was going on date nights with my husband. I still worked out and took care of myself so I had the energy and health to do these things.

But I had to step back from some of my volunteer commitments. I hired someone to clean my house for me every two weeks. I had to miss some trips with friends and I have never been “Employee of the Month.”

But you know what, none of that matters to me anymore. Yes, I would love to do all those things and have all the things and be the best but it’s not possible or feasible. At least without an assistant, a chef, a trainer, and a clone of myself.

I started cutting myself some slack and started taking naps again on the weekend because I was tired. My body needed rest, so I let it rest. I let myself start watching my favorite TV shows again even though they might take up five hours a week of my life and I could only watch them in 20-minute increments.

Why? Because they made me happy. And if I was going to focus on me and my family, I needed to be happy. And relaxed. And caught up on the Bachelor and Project Runway. Don’t judge.

So no, as women we cannot have it all. You will always have to prioritize one thing over another. That’s just life. So don’t be so hard on yourself. It’s not worth the stress and the worry.

Seriously, I have been there and it was a disaster. Don’t punish yourself. Take time to do what makes you happy.

Until next time,

Jamie

When you need a foodie adventure with the kids, hit the streets in search of Seattle’s hottest food trucks. We’ve got the dish on where you’ll find them and the can’t-miss tastes you’ve got to try. Ready, set, eat!

Cycle Dogs

Sharon J. via yelp

Chances are you’ve happened upon Cycle Dogs outside of Peddler Brewing during Babies in Arms Happy Hour night. But if you haven’t, it’s time to make it happen. Cycle dogs serves up vegan hot dogs, burgers and more that heap on flavor without using any meat products at all. Grab a fancy dog for yourself and one with a little less personality for the kids (or not) as a healthy alternative to a common kid staple.

Noteworthy noshable: The Seattle dog (of course!). But if city loyalty doesn’t dictate your diet, try the Elote instead.

Find ‘em: Look for them in the Peddler Brewing Co. brew garden when it’s open.

My Sweet Lil' Cakes

My Sweet Lil' Cakes via yelp

Turn back the clock and dial up your taste buds because My Sweet Lil’ Cakes serves up savory and sweet hotcakes on a stick that are as tasty as they are inventive. It’s hard to miss the tiny orange truck that pops against Seattle’s seasonal grey. And the ‘50s fashion embraced by the owners and staff make everything about this truck beyond charming. In short, this is the full package, parents. Psst… yep they’ve got vegan and vegetarian options too!

Noteworthy noshable: Play it safe with the Seattle Chicken & Waffle or add some zest to your day with the Cornbread Cheddar Jalapeno waffle.

Find ‘em: Follow them online and on Facebook to see where they’ll pop up next.

Off the Rez

Anita W. via yelp

The flavorful tastes on display at the city’s first (and only) Native food truck were inspired by owner Mark McConnell’s childhood spent on the Blackfeet Rez in Montana. This is where he enjoyed traditional frybread tacos among family and friends. Now he and his partner, Cecilia Rikard, are bringing the tastes of home to the streets of Seattle. A bit on the indulgent side, you can’t go wrong with frybread tacos and burgers. But if you want a lighter fare, quinoa and kale salad also adorn the menu.

Noteworthy noshable: You came for the frybread, so eat the frybread. Pair a veggie chili taco with lemon curd sweet frybread for a “lighter” summer option.

Find ‘em: Grab a bite at one of their regular spots Mondays, Wednesdays or Fridays. Families can also follow their Facebook page for pop-ups and on-offs that are just as tasty.

Tat's Truck

Aaron L via yelp

East meets West at Tat’s Truck. The mobile version of this popular Pioneer Square deli, Tat’s serves up Philly style sandwiches that practically teleport your taste buds back to Philly or Jersey, take your pick. Stick with the standard fare when you order for a tried and true classic or spice things up a bit with the daily special. Don’t forget the TastyKakes to complete this culinary experience.

Noteworthy noshable: Try the Turkey Tat’strami. Consider it balanced indulgence in sandwich form.

Find ‘em: They’ll be parked at Hans VW repair in West Seattle on Saturdays this summer. Check their website for changes and hours.

Sugar + Spoon

Sugar Spoon

Because raw egg shouldn’t hold you back, there’s Sugar + Spoon. This food truck serves up raw cookie dough disguised as ice cream and we couldn’t be more smitten with this ingenious pairing that should have happened ages ago. Grab your favorite scoop in a cup or waffle cone (after a healthy meal, of course). We recommend sharing with your minis to avoid imminent sugar rush.

Noteworthy noshable: You can’t go wrong with a scoop of Snickerdoodle, but your kids will probably want Cookie Monster.

Find ‘em: You can find them at their “On the Ave” location with limited hours by texting 425-615-5714. Or track their surrounding-area pop-ups online.

Where Ya At Matt

Matt U. via yelp

This long-time local food truck fave is still rolling around Seattle serving up tasty Po-Boy’s, jambalaya and hot beignets to loyal fans. Since 2010 chef Matt Lewis has put his personal flair into his food, melding traditional New Orleans flavors with unusual ones, creating new and exciting combos you need in your mouth. Stick with a simple sandwich or add in some sides to share with your crew when you order.

Noteworthy noshable: Try the Creole Pork Po’boy for a change. And don’t forget the beignets!

Find ‘em: WYAM is popping up all over town. Follow them on Facebook to see when the truck will be in your ‘hood.

The Ultimate Melt

Charlene W via yelp

Tracking down gooey goodness is part of the parenting package. So add The Ultimate Melt food truck to your ongoing list. It’s your kiddo’s grilled cheese all grown-up, complete with a side of tater tots. You won’t find healthy here, but that’s not the point, right? And consider yourself lucky if they’ve loaded their namesake sandwich onto the truck. It’s a triple decker built with four different kinds of cheese, layered with bacon, tomato, onions and mushrooms.

Noteworthy noshable: We Brie Jammin’ mixes sweet, salty, cheese and bread, need we say more?

Find ‘em: North, south, east and west here’s find out where they’ll pop up next on their website.

Bean Fish

Jessalyn P. via yelp

Although we miss seeing them at the Fremont Sunday Market (for now anyway), families can still find this food truck dishing up Japanese comfort food around the Emerald City. When it comes to feeding the kids, we love the packaging of these sweet and savory waffles that are mostly mess-free and hand-held, and the cheeky names don’t hurt either. You’ll find flavorful fillings like Korean kalbi beef, cheese and kimchi (K-pop), or mushrooms, garlic, wasabi peas and cheese (Kinoko Magic), all tucked snugly inside a kitschy fish-shaped waffle. Enticing? Yes, especially for tots.

Noteworthy noshable: The Domo Arigatou, Mr. Roberto should get props for the name alone, but its Mexican meets Japanese flavoring is a great combo. If sweet is what you’re after, try the Crackyaki, an homage to New York’s famed Milk Bar bakery.

Find ‘em: This truck really gets around. Check their website for this month’s locations.

Buns on Wheels

Scott P via yelp

A burger and fries is always a crowd pleaser. When it comes served on a Macrina-baked brioche bun, topped with Beecher’s cheese and paired with truffle fries, it beats out typical fast food burger fare by a mile. Grabbing one is easy for Eastside families looking for gourmet street food. Don’t like beef? Choose chicken or salmon instead.

Noteworthy noshable: The Sammy. Wild-caught Alaskan salmon in burger form? Yes, please.

Find ‘em: The truck is parked outside Samena Swim Club (15231 Lake Hills Blvd.) in Bellevue every day. They serve dinner nightly from 5-8 p.m. and lunch from 11 a.m.-2 p.m. on Fridays.

Right when you’ve finally mastered the art of milk feeds—bam! Solid food enters the chat. If you’re feeling a bit lost amid this parenting curveball, you’re not alone, but rest assured that we’re here to help. As a dietitian, I’ve pulled together a list of tips and tricks to make your transition while starting baby on solids a piece of cake (or a spoonful of mashed avocado). Hold onto your aprons; it’s time for a messy adventure!

1. Know when baby’s ready.

The first step is to wait until your baby is developmentally ready for solid food. Look out for the following signs of readiness, which usually pop up around the 6-month mark:

  • Baby can sit with minimal support
  • Baby has steady head control
  • Baby is super interested in food and watching you eat
  • Baby has mastered bringing objects to mouth

Keep in mind that the American Academy of Pediatrics (AAP) recommends sticking exclusively to breastmilk or formula for the first six months so there’s no need to rush onto the solid food scene. Savor those cozy milky moments.

2. Master the schedule.

There’s no mom math more challenging than mastering your baby’s schedule—finding that sweet spot for solid food between naps and milk feeds is no easy feat! Our go-to suggestion? Aim to introduce solid food about 30-90 minutes before or after a milk feed. It’s all about finding the happy zone, when your babe is hungry enough (but not hangry!) for solids but not too filled up on milk. If milk is liquid gold, timing is platinum.

3. Safety is key

While babies can enjoy most foods, there’s definitely a list of no-nos. Honey, for example, is off the table for babies under one due to the risk of containing spores of Clostridium botulinum, which could lead to infant botulism. Your in-laws may suggest mixing infant cereal into bottles for better sleep, but nope, that’s outdated advice because it’s a choking hazard. Plus, it’s important to learn the ropes of baby-friendly textures and shapes to minimize the risk of choking.

4. Offer the rainbow

Unlike the old-school approach of serving the same food for three days in a row, it’s totally OK to offer more variety right from the start. Introducing littles to different food groups—protein, fruit, veggies, grains—will expose them to a rainbow of color, nutrition, texture, and flavor. Trust me, grooming your future foodie is the ultimate goal.

5. Embrace the mess

Let those little hands dive into food fun! The mess isn’t just chaos; it’s an introduction to a whole new sensory adventure. Babies get to know the ins and outs of food through touch, smell, and, of course, shmearing it all over the place. It’s a helpful segue before taking that first taste plunge, so chuck the fancy bibs aside, strip them down to their diapers, and let the mess unfold! Tip: throw a splat mat or disposable tablecloth under the highchair to make clean up a whole lot easier!

Ever dreamed of a portable ice cream cake? Thanks to Evermine, your foodie dreams are an easy recipe away. This mason jar ice cream cake is a cookie and cream delight, but we’re sure any flavor combination you choose will be just as great. Scroll down for the delicious recipe!

IceCreamCake9

Serves 6-8

Ingredients:
6-8 wide mouth mason jars with rings and lids
1 package of chocolate wafer cookies
½ cup butter
Cookie ice cream, softened
Chocolate cherry ice cream, softened
Dark chocolate fudge ice cream sauce

Method:
1. Reserve a few cookies for garnish. Grind the rest of the cookies in a food processor until you get a fine crumble.

2. Melt the butter and pour over cookie crumbs in a separate bowl.

3. As the mason jars are going to go in and out of the freezer now for each layer, I put them in a large-size muffin tin for ease. Spoon the cookie mix into the bottom of 6-8 mason jars (6 jars will have a thick crust and 8 jars will have a thin crust). Press the cookie mix firmly into the bottom of each mason jar and freeze.

4. Spread the cookie ice cream onto frozen crust and freeze.

5. Spread chocolate fudge sauce onto first layer of ice cream and freeze.

6. Spread chocolate cherry ice cream onto frozen chocolate sauce, screw lid on, and freeze.

7. Serve with a few cookies crumbled on top and a strong spoon.
