Instructions

    1. Heat oil in a large skillet over medium-high heat. Add ground beef and cook, stirring occasionally until well browned, about 5 to 8 minutes. Stir in taco seasoning and cook until fragrant, about 1 minute.
    2. Cook your hot dogs your favorite way. We suggest pan-fried with butter!
    3. Place each hot dog in a bun and top with ground beef, lettuce, queso fresco, tomato and cilantro.

Lean ground beef 1 lb.
Yellow onion, finely chopped 1 whole
Garlic, minced 2 clove(s)
Jalapeno, diced 1 whole
Chili powder 2 Tbsp.
Ground cumin 1 Tbsp.
Kosher salt 1 Tsp.
Sugar (or sugar substitute) 1 Tbsp.
Tomato sauce 1 cup(s)

Instructions

  1. Preheat oven to 400°F. Slice hot dogs on the bias into 1/2″ slices.
  2. Combine beef, remaining onion, garlic and jalapenos in a large oven-safe skillet over medium-high heat. Cook, breaking up beef with a spoon, until beef is browned, about 10 minutes. Drain fat from skillet.
  3. Return to the skillet to heat and stir in chili powder, cumin, salt, sugar, tomato sauce and water. Bring to a simmer, reduce heat to medium-low and continue to simmer for 30 minutes, stirring occasionally.
  4. Stir hot dogs into chili mixture and top with cheddar cheese. Bake skillet for 10 to 15 minutes, until the cheese is melted and bubbling. Top with scallions and serve.

1/3 cup brown sugar

1 pound ground beef
1 tablespoon veggie oil
1 tablespoon chives
roasted/steamed broccoli

Method:
1. Start with a large skillet and heat oil until hot. First add garlic and cook for a minute until you can smell it fragrantly. Add in ground beef.

2. While beef is cooking mix brown sugar, soy sauce, sesame oil, red pepper flakes, and lastly ginger in a small bowl. Set aside.

3. Once beef is cooked and all crumbled, drain the fat. Pour in sauce mixture with chives, let simmer until hot.

4. Serve over brown rice with roasted broccoli.

The U.S. Department of Agriculture has announced that Lakeside Refrigerated Services is recalling roughly 120,872 pounds of ground beef products that could be contaminated with E. coli O103. Currently, there have been reports of illness as a result of the recalled products.

The ground beef items were produced from Feb. 1, 2022, through Apr. 8, 2022 and amount to about 40 unique products. You can view the entire list of recalled product names and codes here and the labels here. (And you can check out our coverage of other recent recalls here.)

Some of the recalled brands include Thomas Farms, Nature’s Reserve, Tajima, Marketside Butcher, Weis and Seg. The affected products include beef bricks, patties, ground Wagyu and various sizes of chubs (the actual term).

If you’re unsure if your ground beef products have been recalled, you can check the establishment number, which is found inside the USDA mark of inspection and shows “EST. 46841.” The recalled products were shipped to retail locations nationwide and include stores like Walmart and Target.

The USDA’s Food Safety and Inspection Service (FSIS) wants to ensure that consumers do not have the recalled products stored in refrigerators or freezers. Those infected with STEC O103 (Shiga toxin-inducing e.Coli) can develop vomiting and diarrhea, and infections are common in children under five years old and older adults.

If you do find a recalled product in your home, do not eat it. You can throw it away or return it to the place of purchase for a refund. If you have questions, you can contact Lakeside Refrigerated Services directly at 800-493-9042 and customercare@lakesiderefrigerated.com.

Earlier this year, a similar ground beef recall affected products at Walmart in addition to Kroger and Albertsons. If you want to stay up-to-date on food recalls, you can check the FSIS website.
