Simply saute white onion and the sliced up sausage in a bit of olive oil until the onion is soft and the sausage has browned. Add the chicken stock or broth and bring to a boil. Then, add the tortellini and reduce heat to a simmer for about four minutes. Finally, toss in the chopped kale, let it wilt and then top with parmesan cheese. 

Warm Winter Salad

This easily assembled winter salad takes advantage of the fruits (and veggies!) of the season. It’s hearty enough to serve as a main dish but can double as a side just as easily. The trick? The warm vinaigrette dressing you whip up ahead of time and pour over a package of Trader Joe’s Cruciferous Crunch bagged salad mix to soften it up. Top the now slightly wilted salad with sliced yellow beets, edamame and pomegranate seeds that all come prepped and ready to go. Then throw on your favorite winter citrus (we’re partial to grapefruit) before serving. This dish hits all the healthy notes!

Chicken Alfredo with Linguine and Broccoli

Give your go-to alfredo sauce a seasonal boost with this new harvest version that's made with lots of cheese, cream and plenty of fall flavors. Simply warm up the sauce on low with ready-made chicken strips, toss it with a bag of linguine and add some steamed broccoli on the side. Dinner is done! 

Classic Fondue

Trader Joe’s is on a mission to bring fondue back. We’re loving it because busy parents can throw this cheesy meal together faster than your Insta-pot can say “ready, set, go!” Simply heat a container of Trader Jacques’ La Fondue (made with three savory kinds of cheese) in the microwave for about five minutes. Let it sit for one or two more, and then bring it straight to the table (psst … no dishes or special cookware are part of this easy-peasy meal’s appeal), where you can have fresh fruit, veggie, and French bread pieces waiting. The only thing that would make this meal better is a matching container of chocolate fondue for dessert!

Butternut Squash Soup

Bring your best winter soup game with this lighting-quick meal that’ll warm your mini crew up from the inside. It starts with a box of Trader Joe’s butternut squash soup heated through on the stove. It finishes with all kinds of scrumptious, seasonal toppings your little chefs will love to toss into this healthy soup base (We’re digging dried cranberries, sour cream, and pumpkin seeds, but green onions, almonds, and goat cheese might be just as good!). Cater your topping choices so everyone in the fam gets to ladle up a bowl of their favorite flavors. Pair it with a box of Raisin Rosemary Crisps, and you’ve got the easiest, tastiest soup you’ve ever made.

Fortified Mandarin Orange Chicken

You know your little foodie will gobble this one up no matter what the season. So why not turn it into a filling dish that meets your kiddo’s daily veggie requirement too? It’s easy to beef it up with winter greens like broccoli, peas and green peppers. Follow SOP for stovetop prep when you’re cooking the chicken and sauce. Throw in chunky green peppers and broccoli florets for the last few minutes, and cover your saucepan so they steam a bit, and then swirl in a handful frozen green peas just before you serve. Your little chef won’t know what hit her!

Individual Pizza Pies

Pizza is always a hit in your house, but deciding on toppings is where you hit a snag. Overcome the great pizza debate by making simple individual pies for your half-pint and better half this winter. Use Trader Joe’s frozen naan bread, covered with your favorite pizza sauce to start. Then let everyone pile their must-have toppings onto pre-shredded mozzarella. Mushrooms, olives, pineapple, pepperoni. It’s all fair game here. It takes about 5-7 minutes in a preheated 400-degree oven to turn the cheese nice and bubbly. That’s when you know they’re ready to bring to the table!

You’ve been looking for an excuse to try Trader Joe’s new Everything But the Bagel seasoning, so we came up with one for you. Make it the primary flavor of this simple winter rice bowl that combines seasonal squash and broccoli with Trader Joe’s precooked, frozen chicken. Cook the chicken, squash zig zags and broccoli on their own (psst ... it’s easy to throw a personal spin on this bowl by subbing your seasonal faves in lieu of ours). Then zap the three-minute miracle bag of TJ's Organic Brown Rice in the microwave before tossing it into a bowl. Top the rice with fixings and then get down to seasoning it to your liking. Here’s the recipe:

3.5 cups cooked bulgur wheat ( I made 1 cup uncooked )
2-3 chopped mini cucumber
1/2 cup chopped parsley
1/2 cup chopped mint
1/3 cup chopped red onion
1/2 cup chopped pistachios
2 cups chickpeas
Juice of 1 lemon
1/4 cup extra virgin olive oil
Salt & pepper
1/2 cup crumbled feta

Yes, it’s really this easy. You just dump all of this in a bowl, douse it with olive oil and lemon, mix it up, and enjoy! We had to try it to see if it was really worth eating every day. The verdict? Yes. It’s delicious!

We’re not saying it’s okay if your kids refuse to eat their salads, but if they had an aversion to iceberg lettuce processed at Dole Fresh Vegetables, Inc.’s Springfield, OH and Soledad, CA production facilities recently, it might not be the worst thing.

Dole Fresh Vegetables, Inc. is voluntarily recalling all Dole-branded and private label packaged salads processed at these two facilities due to a possible Listeria monocytogenes contamination. So what’s that? Listeria monocytogenes is an organism that can cause serious and sometimes fatal infections in young children, frail or elderly people and others with weakened immune systems. If you’re healthy and you get it, you’ll probably just have a few days of fever, headache, stiffness, nausea, cramping, and diarrhea (um, no thanks). But—and here’s the kicker—it’s been shown to cause miscarriages and stillbirths among pregnant women.

You don’t have to toss out everything in your fridge or pantry by Dole (or the private labels also affected). Take a peek in your fridge and get rid of packaged salad mixes containing iceberg lettuce that has a product lot code beginning with the letter “W” or “B” and a “Best if Used By” date between December 22, 2021 and January 9, 2022. The product lot codes are located in the upper-right-hand corner of Dole’s packaging.

Currently, the private brands include HEB, Marketside, President’s Choice, Kroger and Little Salad Bar.

No illnesses have been reported with the products being recalled to date, and you can specifically check your products against recalled Dole products on the FDA’s website.

I think about that saying, “Man plans and God laughs,” a lot when it comes to my small brood of boys. I always planned for a little girl; three boys later and God is still laughing. When my first was born and they announced I had a little boy, I was shocked. I can still see my husband’s mouth bubbling around the letter B. I remember staring at him blankly. A boy? What was I going to do with a boy? I was positive I was having a girl; I would know what to do with a girl; I’d mentally prepared for a girl and now I had to readjust my emotions and expectations.

And Then Baby #2 Was a Boy

My next child came a quick 16 months later. Another healthy, beautiful baby boy; I was thrilled. I was also surprised…and a little disappointed. I’d tempered my expectations the second time around and announced at every opportunity that it was probably another boy, but quietly, I wished and prayed for my girl. God laughed again when baby boy #2 was born. He was absolutely perfect and I comforted myself with the knowledge that we would (more than likely) have a third. That’s when it would happen, I thought. Third time’s a charm; I’ll get my girl then.

And Then Baby #3 Showed Up

Baby #3 came two weeks early. My husband and I were at dinner with some of his work colleagues. I’d been having contractions, sporadic and irregular, nothing to worry about. Braxton Hicks, for sure. We spent a lovely evening with lovely people and I took my sweet time eating everything. Crab salad? Yes, please. The duck confit? Definitely. And I’m pregnant, so can I add mashed potatoes to that order? Is there any more bread? Dessert? I’m glad you asked. That flourless chocolate torte looks delicious.

On the 15-minute ride back to our house, I went from contractions every 25+ minutes to every 5 minutes. My husband was ready to go to the hospital immediately. I made us wait and time the contractions; we got to the hospital at 2 a.m.

Matthew was born around 7:00 that morning. I pushed that baby out and held my breath, waiting for the nurses to tell me it was a girl. I had a name ready. I would see her and hold her and my family would be complete. It was my husband who finally got a glimpse of the goods and told me that I had another son…and I burst into tears. Another boy. A third boy. For one quick, irrational moment, I thought: no, it’s fine, there’s another baby in there and she’ll be out in a minute. Then they laid him on top of me. He immediately curled up, started sucking his fingers, and I fell completely in love. He was perfect, an absolutely beautiful baby boy.

The feelings lingered. The sadness, the disappointment, and the utter bemusement that I was now mother to three boys and zero girls. It never even crossed my mind that, when I had my babies, they’d be boys. Most of the people I know have a mix of boys and girls; why would I be different? And so, I cried and then I cried some more. And then I cried off and on for my entire first week home.

My husband couldn’t understand. Here we were, blessed with three beautiful, healthy children. I had healthy pregnancies. The boys were lively and energetic and happy. Why was I so upset? Why couldn’t I be happy with the family we had?

I am happy with the family we have, I told him. I don’t want to give any of the boys back. I wouldn’t trade any of my boys for a girl. Our boys are beautiful and they are happy and they are loved, but I spent my entire life thinking I would have a daughter and now, that isn’t something that will happen for me. After each baby, I comforted myself with the knowledge that we’d try again. Now, our three children are birthed and here and (I hope) thriving and this dream, this expectation, that I’ve had my whole life is gone. It felt like a death, and I felt like I was mourning a whole life of things I’d never now never get to do. Some of it was superficial: the sweet clothes and precious nursery, ruffled bubbles, and smocked dresses, coats, tights, and bows.

The Hardest Part about Not a Having a Girl

The hardest part was emotional. It was letting go of something I’d wanted as long as I could remember, of something I’d always expected to have in my life. These feelings were heart wrenching and devastating in ways I’d never experienced before. I couldn’t work harder or take a class or save money to earn what I wanted. I was entirely at the mercy of God, fate, biology. “You get what you get and you don’t pitch a fit.” Only I did pitch a fit, in my way. I cried; I mourned; and I put it away because really, what else can you do?

I adore my boys—their sweetness and energy, their big hearts, and hilarious toddler commentary. I look at them and can’t believe they’re mine; my heart simply swells. My wild Washington trio humbles me and challenges me and fills me with joy.

I’m able to get my “girls fix” from nieces and goddaughters and children of friends and family who are generous enough to share their daughters with me. It helps, and those feelings of loss or “less than” have morphed into occasional aches…then one of my boys needs his mommy and the ache subsides.

Your little kid-o-saurus is ready for some hands-on action this afternoon but you aren’t equipped with a crafter’s closet. No worries, we weren’t either, but this dinosaur egg project is so easy, you won’t need much more than a few eggs. Read on for the complete how-to.

You’ll Need:

Three glass cups

Hard-boiled eggs

Food coloring (red, green and blue works best)

Water

Instructions:

Step one: Hard boil your eggs. We know there’s a lot of methods and theories on how to make the best hard-boiled egg. Use whatever works for you, but we found that this way renders great results.

Step two: Once your eggs are cool crack them all over. It’s ok if there are pieces missing.

Step three: Add water to your cups just enough to cover your eggs.

Step four: Add food coloring to each cup–we measured out about 5 drops. If you’re feeling extra imaginative feel free to make your own colors like mixing red and blue to make purple.

Step five: Drop one cracked egg into each of your cups.

Step six: Let your eggs sit for a few hours in the refrigerator. If you’re feeling extra patient allow them to sit in the dye overnight. The longer the eggs sit in the cups the bolder the colors on your dino eggs.

Step seven: Carefully drain the water in the sink and pull out your egg. Peel the outer shells off the hard-boiled egg. Mom and Dad might need to help with this step.

Step eight: Ta-da! You have a set of dino eggs. We set ours up with some pet dinosaurs. Psssst…if the colors don’t weird you out, the dinosaur eggs also make great egg salad sandwich ingredients!
